Basic Dishes and Service
Lesson 4 of 4
20 min
Let's begin
People eat first with their eyes. The same beans and rice can look careless when heaped on a chipped plate, or inviting when served neatly with a green vegetable and a slice of avocado. Hotels, restaurants and caterers in Rwanda's growing tourism and conference industry depend on staff who can present and serve food well.
In this lesson you will learn the principles of food presentation, how to lay a table, and the main styles and rules of food service.
A cover is the space and set of cutlery, crockery and glassware laid for one person.
| Style | How it works | Where used |
|---|---|---|
| Plate service | Food is plated in the kitchen and carried to each guest. | Restaurants, school canteens |
| Family service | Dishes are placed on the table and guests help themselves. | Homes, small gatherings |
| Buffet service | Dishes are laid out on a long table; guests queue and serve themselves (sometimes helped by staff). | Weddings, conferences, parties |
| Silver service | A waiter serves food from a dish onto the guest's plate at the table using a spoon and fork. | Formal banquets, high-class hotels |
Task: A school hosts 80 parents for a prize-giving lunch in a hall. Staff are few and the menu is rice, beans, isombe, grilled chicken and fruit salad. Choose a service style and justify it.
Solution: Buffet service. It serves many people quickly with few staff; guests choose their own portions; hot dishes can be kept hot in covered pans or chafing dishes. Safety: one serving spoon per dish, food covered, and hot dishes replaced rather than topped up with cold food. Silver service would need many trained waiters, and family service would need a dish on every table.
Tip
Memory hook: "Food from the Left, drinks and clearing from the Right": FL, DR. And for cutlery, "Fork and Left both have four letters; Knife and Right both have five."
Exam technique: when asked to choose a service style, justify it with the number of guests, the number of staff and the formality of the occasion.
Name three things that make a plate of food look attractive.
Solution: Any three of: a mix of colours; varied textures and shapes; correct portion size with a clean rim; a suitable garnish; the right serving temperature.
On which side of the plate is the knife placed, and which way does its blade face?
Solution: On the right, with the cutting edge facing the plate.
From which side is a guest's plate cleared?
Solution: From the right.
Give one advantage and one disadvantage of buffet service.
Solution: Advantage: many guests are served quickly by few staff, and guests choose their portions. Disadvantage: food can be wasted or contaminated if guests handle it carelessly, and it is hard to keep dishes at safe temperatures for long.
